Preparation
- Preheat the Oven: Preheat your oven to 350 degrees F (175 degrees C) and line an 8x8 inch baking dish with parchment paper.
- Mash the Bananas: In a large mixing bowl, mash your bananas until smooth, leaving small lumps if desired.
- Mix the Wet Ingredients: Stir in almond butter, maple syrup, and vanilla extract until well combined. Add eggs one at a time, mixing thoroughly.
- Whisk the Dry Ingredients: In another bowl, whisk together cocoa powder, baking soda, espresso powder, and sea salt.
- Combine Wet and Dry: Gradually fold the dry mixture into the wet ingredients without overmixing.
- Add Chocolate Chips: Fold in 2/3 cup of chocolate chips and pour the batter into the prepared baking dish. Sprinkle the remaining chocolate chips on top.
Baking
- Bake: Place in the oven and bake for 20 minutes, or until set but slightly gooey in the center.
- Cool and Slice: Remove from oven and let cool for 10 minutes before cutting into squares.
Notes
Check brownies a minute or two before the timer goes off to catch the perfect bake. Avoid slicing them right away; they need time to firm up.
