Ingredients

Main Ingredients
  • 3 large very ripe bananas The riper, the better! Look for bananas with lots of brown spots.
  • 0.5 cup almond butter Brands like Justin's or MaraNatha are recommended. Can substitute with peanut butter.
  • 4 tbsp maple syrup Opt for pure maple syrup for the best taste.
  • 1.5 tsp vanilla extract Adds a delightful aroma.
  • 2 large eggs They'll give the brownies structure.
  • 0.75 cup unsweetened cocoa powder Choose Dutch-processed for a smoother chocolate flavor.
  • 0.5 tsp baking soda This is your leavening agent.
  • 0.25 tsp espresso powder Deepens the chocolate flavor.
  • 0.5 tsp fine sea salt Balances the sweetness.
  • 1 cup chocolate chips Semi-sweet or dark chips; Ghirardelli and Enjoy Life are great choices.

Method

Preparation
  1. Preheat the Oven: Preheat your oven to 350 degrees F (175 degrees C) and line an 8x8 inch baking dish with parchment paper.
  2. Mash the Bananas: In a large mixing bowl, mash your bananas until smooth, leaving small lumps if desired.
  3. Mix the Wet Ingredients: Stir in almond butter, maple syrup, and vanilla extract until well combined. Add eggs one at a time, mixing thoroughly.
  4. Whisk the Dry Ingredients: In another bowl, whisk together cocoa powder, baking soda, espresso powder, and sea salt.
  5. Combine Wet and Dry: Gradually fold the dry mixture into the wet ingredients without overmixing.
  6. Add Chocolate Chips: Fold in 2/3 cup of chocolate chips and pour the batter into the prepared baking dish. Sprinkle the remaining chocolate chips on top.
Baking
  1. Bake: Place in the oven and bake for 20 minutes, or until set but slightly gooey in the center.
  2. Cool and Slice: Remove from oven and let cool for 10 minutes before cutting into squares.

Notes

Check brownies a minute or two before the timer goes off to catch the perfect bake. Avoid slicing them right away; they need time to firm up.
