  • 1/2 tbsp baking powder Helps the scones rise

Wet Ingredients
  • 4 tbsp cold butter Cut into 1/2-inch cubes
  • 1 tsp freshly minced thyme Fresh herbs recommended
  • 1/2 cup heavy cream Half-and-half can be a lighter alternative
  • 1/4 tsp vanilla extract Adds warmth and sweetness
Main Ingredients
  • 4 oz strawberries Finely diced into 1/4-inch pieces; fresh is ideal

Method
 

Preparation
  1. Cut the cold butter into 1/2-inch cubes. If time allows, chill them in the freezer for about 10-15 minutes.
  2. Preheat the air fryer to 355°F.
  3. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  4. Add the butter cubes to the flour mixture and mix until the dough resembles coarse breadcrumbs.
  5. Gently fold in the minced thyme.
  6. Pour in the heavy cream and vanilla extract, folding until just combined.
  7. Fold in the diced strawberries to form a shaggy dough.
  8. Turn the dough onto a lightly floured surface and press it into a circle about 1-inch thick. Slice into 8 wedges.
Cooking
  1. Transfer the scone wedges onto a piece of parchment paper. Brush the tops with remaining cream and sprinkle with sugar.
  2. Air fry for 10-14 minutes until golden brown and cooked through.
  3. Remove and let cool on a wire rack for 5-10 minutes before serving.

Notes

Do not overwork the dough; adjust air frying time if necessary. Use fresh herbs for maximum flavor.
