Preparation
- Cut the cold butter into 1/2-inch cubes. If time allows, chill them in the freezer for about 10-15 minutes.
- Preheat the air fryer to 355°F.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Add the butter cubes to the flour mixture and mix until the dough resembles coarse breadcrumbs.
- Gently fold in the minced thyme.
- Pour in the heavy cream and vanilla extract, folding until just combined.
- Fold in the diced strawberries to form a shaggy dough.

Cooking
- Transfer the scone wedges onto a piece of parchment paper. Brush the tops with remaining cream and sprinkle with sugar.
- Air fry for 10-14 minutes until golden brown and cooked through.
- Remove and let cool on a wire rack for 5-10 minutes before serving.
