For the Sauce
  • 1/2 cup mayonnaise Use a good-quality brand for the best flavor.
  • 1/2 cup sour cream or Greek yogurt Both options add creaminess, but Greek yogurt offers a lighter twist.
  • 2 tablespoons fresh lime juice Freshly squeezed is ideal; it brightens the sauce.
  • 1/2 teaspoon minced garlic Use freshly minced for a bolder flavor.
  • 1 teaspoon chili powder Adds warmth and a lovely color.
  • 1/2 teaspoon cumin For an earthy aroma.
  • 1/4 teaspoon cayenne pepper Adjust to your heat preference.
  • to taste None Salt and pepper Essential for rounding out the flavors.

Method
 

Preparation
  1. In a mixing bowl, combine mayonnaise, sour cream (or Greek yogurt), fresh lime juice, minced garlic, chili powder, cumin, cayenne pepper, and salt and pepper.
  2. Using a whisk, blend the ingredients until they are completely smooth. A food processor or blender can be used for an ultra-smooth consistency.
  3. Taste your sauce and adjust lime or spices as needed.
  4. Cover and chill in the fridge for at least 30 minutes.
  5. Serve your sauce with grilled fish tacos, or your other favorite dishes.

Notes

Storing leftovers in an airtight container in the fridge extends freshness for one week. Letting the sauce chill for several hours enhances flavor.
