Preparation
  1. In a large mixing bowl, whisk together the oats, ground flaxseed, and a pinch of salt for about 30 seconds to distribute everything evenly.
  2. Add in the peanut butter, honey, and vanilla extract to the dry mixture. Stir vigorously for about a minute until well combined.
  3. Fold in the chocolate chips gently until they’re evenly distributed.
  4. Roll the mixture into 1-inch balls. If the mixture feels too sticky, refrigerate it for 10-15 minutes before rolling.
  5. Place the energy balls on a lined baking sheet. Chill them in the fridge for at least 30 minutes to firm up.

Notes

Store in an airtight container in the fridge for up to two weeks or freeze for up to three months. If the mixture isn’t sticking together, add a splash more honey or peanut butter.
