  • 1/4 cup chia seeds Opt for high-quality chia seeds.
  • 1 cup almond milk (or any milk of choice) Using unsweetened almond milk keeps it flavorful without added sugars.
  • 1 cup fresh blueberries Fresh is best, frozen blueberries can be used too.
  • 2 tablespoons honey or maple syrup Sweeten to your taste!
  • 1/2 teaspoon vanilla extract Opt for pure extract for the best taste.

Preparation
  1. In a medium bowl, combine the chia seeds, almond milk, honey (if using), and vanilla extract. Stir thoroughly to avoid clumping.
  2. Allow the mixture to rest for about 5 minutes to give the chia seeds time to soak up the liquid.
  3. Stir the pudding once more to break up any clumps that may have formed. Cover with plastic wrap or transfer to jars and refrigerate for at least 2 hours or overnight.
  4. After chilling, layer your pudding in jars with fresh blueberries to serve.

Notes

This pudding can last in the fridge for up to 5 days. Customize with various toppings like granola, coconut flakes, or nuts.
