  • 3 cups chow mein noodles You can find these in the Asian food aisle. They add that essential crunch!
  • 2 cups ripple potato chips I love using Ruffles for that perfect crispy texture and flavor contrast.
  • 1 bag butterscotch chips (about 11 ounces) Go for Guittard or Ghirardelli brands for a richer taste.
  • 1/2 cup creamy peanut butter Make sure it’s at room temperature for easy mixing—Skippy or Jif are fantastic choices.

  1. Line two large baking sheets with parchment paper to prevent sticking.
  2. In a large mixing bowl, toss in the salted peanuts, chow mein noodles, and ripple potato chips. Stir to combine.
  3. In a separate microwave-safe bowl, add the butterscotch chips and creamy peanut butter. Microwave in 30-second intervals, stirring after each, until completely melted (about 1-1.5 minutes total).
  4. Pour the melted butterscotch mixture over the peanut, noodle, and chip mixture. Stir until everything is well-coated.
  5. Using a spoon, drop dollops of the mixture onto the parchment-lined baking sheets. If it starts to harden, microwave again for 15-20 seconds.
  6. Allow the haystacks to cool at room temperature until firm, approximately 10-15 minutes.

Notes

Store your haystacks in an airtight container at room temperature for up to a week; refrigerate for up to two weeks. You can prepare these a few days before an event.
