- Line two large baking sheets with parchment paper to prevent sticking.
- In a large mixing bowl, toss in the salted peanuts, chow mein noodles, and ripple potato chips. Stir to combine.
- In a separate microwave-safe bowl, add the butterscotch chips and creamy peanut butter. Microwave in 30-second intervals, stirring after each, until completely melted (about 1-1.5 minutes total).
- Pour the melted butterscotch mixture over the peanut, noodle, and chip mixture. Stir until everything is well-coated.
- Using a spoon, drop dollops of the mixture onto the parchment-lined baking sheets. If it starts to harden, microwave again for 15-20 seconds.
- Allow the haystacks to cool at room temperature until firm, approximately 10-15 minutes.
Notes
Store your haystacks in an airtight container at room temperature for up to a week; refrigerate for up to two weeks. You can prepare these a few days before an event.
