Preparation
- Pour the almond milk into a blender, then add the blueberries, maple syrup, vanilla essence, and a pinch of salt.
- Blend on high speed for about 1-2 minutes until everything is well combined.
- Transfer the mixture to a jar and stir in the chia seeds.
- Allow the mixture to sit for 5 minutes, then stir again.
- Cover the jar and refrigerate for at least 30 minutes (or up to 12 hours) to let the chia seeds swell.
- Once chilled, give it a quick stir, spoon into bowls, and top with extra blueberries and granola.
Notes
Best stored in an airtight container and consumed within 3-4 days. Can be prepared up to 3 days in advance for convenience.
