Preparation
  1. Grab a jar or container that can be sealed tightly.
  2. Pour 2/3 cup almond milk into your jar. Add 2.5 tbsp chia seeds, 1 tbsp honey, and 1/4 tsp ground cinnamon. Stir vigorously for about 1 minute.
  3. Let the mixture sit for about 2-3 minutes to allow the chia seeds to start absorbing the liquid.
  4. Stir again thoroughly to break up any clumps of chia seeds, adding more sweetener or flavorings if desired.
  5. Cover the jar tightly and refrigerate for at least 2 hours, preferably overnight.
Serving
  1. Hull and slice your fresh strawberries into 1/4-inch pieces.
  2. When ready to enjoy, stir the pudding to loosen it up and top generously with fresh strawberries.

Notes

Store leftover pudding in an airtight container for up to 5 days in the fridge. Stir in more almond milk if texture thickens.
