Preparation
- Grab a jar or container that can be sealed tightly.
- Pour 2/3 cup almond milk into your jar. Add 2.5 tbsp chia seeds, 1 tbsp honey, and 1/4 tsp ground cinnamon. Stir vigorously for about 1 minute.
- Let the mixture sit for about 2-3 minutes to allow the chia seeds to start absorbing the liquid.
- Stir again thoroughly to break up any clumps of chia seeds, adding more sweetener or flavorings if desired.
- Cover the jar tightly and refrigerate for at least 2 hours, preferably overnight.
Serving
- Hull and slice your fresh strawberries into 1/4-inch pieces.
- When ready to enjoy, stir the pudding to loosen it up and top generously with fresh strawberries.
Notes
Store leftover pudding in an airtight container for up to 5 days in the fridge. Stir in more almond milk if texture thickens.
