  • 1 cup unsalted butter, softened Ensure butter is at room temperature for easy mixing.
  • 4 cups powdered sugar Sift before measuring to avoid lumps.
  • 1/4 cup coconut milk Full-fat coconut milk recommended for extra creaminess.
  • 1 teaspoon vanilla extract Pure vanilla extract is preferred.
  • 2 teaspoons coconut extract Good-quality coconut extract enhances the flavor.
  • pinch salt Balances sweetness and enhances flavor.

Method
 

Preparation
  1. In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until creamy, about 1-2 minutes.
  2. Gradually add the powdered sugar, about a cup at a time, mixing well between each addition.
  3. Once the sugar is fully incorporated, add the coconut milk, vanilla extract, coconut extract, and a pinch of salt.
  4. Continue beating on medium speed for 2-3 minutes until the frosting is light, fluffy, and spreadable.
  5. Immediately use the frosting to frost cakes or cupcakes, or store in an airtight container in the refrigerator for up to a week.

Notes

Room temperature ingredients yield the best results. Leftover frosting can be stored in the fridge for up to one week, or frozen for up to three months.
