- In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until creamy, about 1-2 minutes.
- Gradually add the powdered sugar, about a cup at a time, mixing well between each addition.
- Once the sugar is fully incorporated, add the coconut milk, vanilla extract, coconut extract, and a pinch of salt.
- Continue beating on medium speed for 2-3 minutes until the frosting is light, fluffy, and spreadable.
- Immediately use the frosting to frost cakes or cupcakes, or store in an airtight container in the refrigerator for up to a week.
Notes
Room temperature ingredients yield the best results. Leftover frosting can be stored in the fridge for up to one week, or frozen for up to three months.
