Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy (about 3–4 minutes).
- Beat in the egg, vanilla extract, and ground cinnamon until well combined.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- In a separate bowl, mix brown sugar with a pinch of cinnamon for the crumb topping.
Baking
- Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet and sprinkle the crumb mixture on top.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Remove them from the oven and let them cool for a few minutes before drizzling with powdered sugar.
Notes
Store leftover cookies in an airtight container at room temperature for up to 3 days. For longer storage, consider freezing for up to a month.
