Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy (about 3–4 minutes).
  4. Beat in the egg, vanilla extract, and ground cinnamon until well combined.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. In a separate bowl, mix brown sugar with a pinch of cinnamon for the crumb topping.
Baking
  1. Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet and sprinkle the crumb mixture on top.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  3. Remove them from the oven and let them cool for a few minutes before drizzling with powdered sugar.

Notes

Store leftover cookies in an airtight container at room temperature for up to 3 days. For longer storage, consider freezing for up to a month.
