Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a medium bowl, whisk together the almond flour, cocoa powder, coconut sugar, baking soda, salt, and ground cinnamon. Ensure there are no lumps.
  3. In a blender, combine the cottage cheese, eggs, honey, vanilla extract, and instant coffee. Blend until smooth—about 30 seconds.
Mixing
  1. Pour the blended mixture into the bowl with the dry ingredients. Gently fold until just combined.
  2. If using, fold in chocolate chips gently.
Baking
  1. Pour the batter into the prepared baking dish and smooth the top. Bake for 22 to 25 minutes.
  2. Allow the brownies to cool in the pan for 15 to 20 minutes before lifting them out using the parchment overhang. Cut into squares.

Notes

Ensure your cottage cheese is blended smooth for the best texture. For nut-free, other flours like oat flour can be tried.
