Ingredients
  

For the Sweet Potatoes
  • 2 pieces sweet potatoes, peeled and cut into 1/2-inch cubes Opt for organic sweet potatoes if possible—they're sweeter and tastier!
  • 2.5 tbsp olive oil (extra virgin for flavor) Use high-quality extra virgin olive oil for a richer flavor.
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 1.5 tsp paprika
  • 1 tsp garlic powder
For the Beef
  • 1 lb ground beef (choose lean for a healthier option)
  • 1.5 tbsp olive oil
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 2.5 tsp paprika
  • 1.5 tsp garlic powder
  • 1/2 tsp cumin
For the Sweet & Spicy Glaze
  • 2 tbsp honey
  • 1.5 tsp sriracha
  • 1/4 tsp red pepper flakes
For the Bowls
  • 2 cups cottage cheese (low-fat or full-fat, your choice) Any brand of cottage cheese works, but Horizon Organic or Breakstone's are recommended.
  • 1 piece avocado, sliced into 1/4-inch thick wedges

Method
 

Preparation
  1. Preheat your oven to 425°F and line a baking sheet with parchment paper or foil for easy cleanup.
  2. In a large bowl, toss the sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder. Spread them out evenly on the baking sheet and roast for 30-40 minutes, stirring halfway through.
  3. While the potatoes are roasting, heat olive oil in a skillet over medium heat. Add the ground beef and cook for about 8-10 minutes, or until browned. Add remaining spices and cook for another 30 seconds.
  4. In a small bowl, microwave the honey for 10 seconds to warm it, then whisk together with sriracha and red pepper flakes.
  5. In individual serving bowls, layer the roasted sweet potatoes, cooked ground beef, cottage cheese, and avocado slices. Drizzle with the honey-sriracha glaze.

Notes

These bowls can be stored in an airtight container in the refrigerator for up to 3 days. Great for meal prep!
