  • 1/2 cup sliced almonds Opt for roasted or raw, depending on your preferred crunch.
  • 3 cups almond milk Or any milk of your choice.
  • 1/4 cup maple syrup For a natural sweetness, use pure maple syrup; honey is an option too.
  • 1 teaspoon vanilla extract I recommend pure vanilla extract for the best flavor.
  • 1 teaspoon baking powder This helps the oatmeal rise nicely!
  • 1/2 teaspoon cinnamon Cinnamon adds warmth and a touch of sweetness.
  • 1/4 teaspoon salt A pinch of salt balances the flavors perfectly.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well.
  3. In another bowl, whisk together almond milk, maple syrup, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the mixed berries and sliced almonds.
  6. Grease a baking dish (9x9 inches) with oil or butter, then pour the batter into it, spreading it evenly.
  7. Bake for 30-35 minutes or until the top is golden brown and set.
  8. Allow the dish to cool for a few minutes before slicing it into squares. Serve warm.

Notes

For the best results, ensure your almond milk is at room temperature and if using frozen berries, let them thaw slightly. Store leftovers in an airtight container in the fridge for up to 5 days.
