For the stuffed jalapenos
  • 12 pieces jalapenos, halved lengthwise and seeded Look for firm, vibrant peppers for optimal flavor.
  • 8 oz cream cheese, softened Philadelphia recommended for richer consistency.
  • 1.5 tsp garlic powder Use fresh minced garlic for bolder flavor if preferred.
  • 5 oz cheddar cheese, grated A sharp cheddar works beautifully.
  • 3 tbsp chives, chopped Substitute with green onions for a milder flavor.
For the coating
  • 1/2 cup panko breadcrumbs Provides delightful crunch.
  • 1.5 tbsp butter, melted and cooled slightly Ensure it's not too hot to avoid curdling the filling.
  • 1/4 tsp smoked paprika Adds depth of flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut each jalapeno in half lengthwise and carefully remove the seeds and membranes. Pat them dry with paper towels.
  3. In a mixing bowl, combine the softened cream cheese, garlic powder, grated cheddar cheese, and chopped chives until smooth and well combined.
  4. In a separate bowl, mix the panko breadcrumbs with melted butter until moistened. Add the smoked paprika.
Assembly and Baking
  1. Spoon the cheesy mixture generously into each jalapeno half.
  2. Gently sprinkle the breadcrumb mixture over the filled jalapenos.
  3. Place the baking sheet in the oven and bake for 18 to 22 minutes until the cheese is melted and tops are golden brown.
  4. Let the poppers cool for 5 to 10 minutes before serving.

Notes

Use rubber gloves when handling jalapenos to avoid irritation. For a twist, drizzle with homemade ranch dressing or lime before serving.
