Preparation
- Preheat your oven to 425°F.
- Arrange your tortillas in a single layer on a large baking sheet and lightly spray both sides with cooking spray.
Cooking the Chicken
- In a large skillet over medium heat, add the olive oil and cook the ground chicken with the taco seasoning until it’s no longer pink, breaking it up into small crumbles.
Assembling Tacos
- On a clean baking sheet, arrange a few tortillas at a time and spray both sides lightly with cooking spray.
- Spoon the cooked, seasoned ground chicken evenly onto each tortilla and sprinkle a generous amount of the cheddar cheese on top.
Baking Tacos
- Carefully fold the tacos over. If they’re popping back open, place a second baking sheet on top of the folded tacos to keep them shut.
- Bake in the preheated oven for about 10 minutes, then remove the top baking sheet and flip the tacos over.
- Continue baking until the tortillas are crispy and the cheese is melted and bubbly, about 5 more minutes.
Serving
- Serve hot with Cilantro Lime Crema, minced cilantro, and thin slices of jalapeño if desired. Enjoy the crispy goodness!
Notes
Ensure your minced ingredients are prepared in advance, and have your cheese at room temperature for easy melting! If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the oven for the best texture.
