  • 2 medium zucchinis, grated Squeeze out excess moisture for a firmer texture.
  • 2 cups fresh tomatoes, diced
  • 1 small onion, diced

  • 6 large eggs
  • 1 cup shredded cheese (e.g., sharp cheddar or feta) Use freshly grated cheese for enhanced flavor.
Herbs & Spices
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish with olive oil.
  2. In a medium bowl, whisk together the eggs until they achieve a ribbon consistency.
  3. Fold in the grated zucchini, diced tomatoes, onion, cheese, and basil. Season generously with salt and pepper.
  4. Pour the mixture into the prepared pie dish, smoothing the top with a spatula.
Baking
  1. Bake in the preheated oven for approximately 35-40 minutes or until the top is golden brown and a toothpick comes out clean.
  2. Remove from the oven and allow to cool for a few minutes before slicing into wedges.

Notes

For the best texture, reheat individual slices in an oven at 350°F (175°C) for 10-15 minutes or in an air fryer. Can be made ahead and stored in an airtight container for up to 3-4 days.
