Ingredients
  

For the brownie base
  • 10 pieces Medjool Dates, soaked in hot water Soaked for 10 minutes for softness.
  • 4 tbsp Chocolate Protein Powder Use a high-quality brand for enhanced flavor.
  • 2 tbsp Cocoa Powder Unsweetened for deep chocolate flavor.
  • 2.5 tbsp Maple Syrup Adjust to taste for sweetness.
  • 1 tsp Vanilla Extract Opt for pure vanilla extract for best flavor.
  • 1/8 tsp Sea Salt Enhances sweetness.
For the cottage cheese layer
  • 1 cup Cottage Cheese Low-fat or full-fat can be used.
  • 1/2 cup Vanilla Protein Powder Optional for added flavor and nutrients.
  • 1.25 cups Almond Flour Can substitute with coconut flour, adjust liquid if needed.
  • 2.5 tbsp Maple Syrup For sweetness in the top layer.
  • 2 tbsp Cashew Butter Can substitute with almond or peanut butter.
  • 1.5 tsp Vanilla Extract Enhances the sweet dessert aroma.
  • 1/3 cup Mini Chocolate Chips For extra chocolate goodness, dark chocolate chips are a great alternative.

Method
 

Preparation
  1. Soak the 10 dates in hot water for 10 minutes to soften them, then drain well.
  2. In a food processor or blender, combine the softened dates with chocolate protein powder, cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until you have a smooth, thick paste.
  3. In a large mixing bowl, combine cottage cheese, vanilla protein powder, almond flour, cashew butter, the remaining maple syrup, and vanilla extract. Mix until fully smooth.
  4. Gently fold in mini chocolate chips.
Assembly
  1. Line an 8x8 inch baking dish with parchment paper.
  2. Press the date-chocolate brownie mixture evenly across the bottom of the dish.
  3. Press the cottage cheese mixture over the brownie layer, covering it completely.
Freezing and Serving
  1. Place the assembled dish in the freezer for at least 1 hour until firm.
  2. Lift the block out using parchment paper and cut into 9-12 squares.

Notes

Always have the butter and cottage cheese at room temperature before starting. Store leftovers in an airtight container in the freezer for up to 3 months.
