Preparation
- Soak the 10 dates in hot water for 10 minutes to soften them, then drain well.
- In a food processor or blender, combine the softened dates with chocolate protein powder, cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until you have a smooth, thick paste.
- In a large mixing bowl, combine cottage cheese, vanilla protein powder, almond flour, cashew butter, the remaining maple syrup, and vanilla extract. Mix until fully smooth.
- Gently fold in mini chocolate chips.
Assembly
- Line an 8x8 inch baking dish with parchment paper.
- Press the date-chocolate brownie mixture evenly across the bottom of the dish.
- Press the cottage cheese mixture over the brownie layer, covering it completely.
Freezing and Serving
- Place the assembled dish in the freezer for at least 1 hour until firm.
- Lift the block out using parchment paper and cut into 9-12 squares.
Notes
Always have the butter and cottage cheese at room temperature before starting. Store leftovers in an airtight container in the freezer for up to 3 months.
