  • 300 g soft or silken tofu Make sure it’s packed in water and drained for the best texture.
  • 0.25 cup dark brown sugar or white sugar Brown sugar adds a hint of molasses flavor.
  • 2-3 Tbsp Flavourings of your choice (e.g., espresso, orange zest, hazelnut liqueurs, vanilla extract) Experiment with what excites you!
  • 1/8 tsp table salt This enhances the chocolate flavor.

Preparation
  1. Melt the chocolate: In a heat-proof bowl over a pot of simmering water, gently melt the chopped chocolate, stirring occasionally for about 5-7 minutes.
  2. Blend the tofu: While the chocolate melts, place the tofu, sugar, flavourings, and salt into a food processor or blender. Blend until completely smooth, about 2-3 minutes.
  3. Combine: Once the chocolate is melted, gradually whisk it into the tofu mixture, ensuring they blend well together.
  4. Add air (optional): For a fluffier mousse, beat the combined mixture with an electric mixer for about 2-3 minutes until lighter and airy.
  5. Chill: Portion the mousse into serving dishes and chill for at least 2 hours before serving.
  6. Serve: Top generously with fresh fruit, crumbled cookies, or cake cubes.

Notes

For best flavor, use a premium brand of chocolate. Ensure your tofu is at room temperature for easier blending. This mousse can be made a day in advance.
