Tortillas and Cheese
  • 4 large Large Flour Tortillas Opt for fresh, soft tortillas for the best outcome.
  • 2 cups Shredded Cheddar Cheese Use quality cheddar; freshly shredded melts better.
Proteins
  • 2 cups Cooked Protein (chicken, beef, pork, tofu, or beans) Leftover rotisserie chicken works great.
Vegetables
  • 1 medium Finely Chopped Red Onion Green onions can be used as a milder alternative.
  • 1-2 cups Cooked Vegetables (zucchini, bell peppers, or sweet potatoes) Pick a handful for extra nutrition.
  • 1 cup Fresh Raw Veggies (diced tomatoes, radishes, or shredded lettuce) These brighten up the dish.
Dips
  • 1 cup Dips (avocado, salsa, sour cream, or Greek yogurt) Add these for extra flavor.

Method
 

Preparation
  1. Heat a large griddle or pan over medium heat.
  2. Place tortillas in the pan, one for each person plus one extra.
  3. On one half of each tortilla, layer the shredded cheese, protein, chopped onions, and vegetables, avoiding overfilling.
  4. Fold the tortillas over and cook until the bottom is golden brown and cheese starts to melt, about 5 minutes.
  5. Flip the quesadillas and cook for an additional 2-3 minutes until crispy and golden.
  6. Cut quesadillas into wedges and serve with raw toppings and dips.

Notes

Make quesadillas in batches to avoid crowding the pan. Experiment with flavors and enjoy customizing each serving.
