- Heat a large griddle or pan over medium heat.
- Place tortillas in the pan, one for each person plus one extra.
- On one half of each tortilla, layer the shredded cheese, protein, chopped onions, and vegetables, avoiding overfilling.
- Fold the tortillas over and cook until the bottom is golden brown and cheese starts to melt, about 5 minutes.
- Flip the quesadillas and cook for an additional 2-3 minutes until crispy and golden.
- Cut quesadillas into wedges and serve with raw toppings and dips.
Notes
