  • 1.5 oz ranch mix Ties everything beautifully together.
  • 1/2 teaspoon cayenne pepper Increase for extra heat if desired.
  • 4 eggs eggs, at room temperature For easy mixing.
  • 1.5 cups flour For the breading process.
  • 1.5 cups bread crumbs Panko works best for crunch.
  • oil for frying Vegetable or canola oil works well.

Method
 

Preparation
  1. In a large mixing bowl, combine the drained canned chicken, hot sauce, ranch mix, and cayenne pepper, stirring until the chicken is fully coated.
  2. Fold in both cheeses and add the sliced green onions. Mix until everything is beautifully combined.
  3. Form the chicken mixture into 1-inch balls and place them on a parchment-lined baking sheet. Refrigerate for 2-3 hours to help them hold their shape.
  4. Set up your breading station with flour, beaten eggs, and breadcrumbs in separate bowls.
  5. Heat oil to 350°F in a deep skillet.
  6. Roll each ball in flour, dip in egg, then coat with breadcrumbs.
  7. Fry the breaded balls in hot oil for 1 to 1.5 minutes, or until golden brown.
  8. Remove the fried balls and place them on paper towels to drain excess oil. Serve warm.

Notes

Avoid overcrowding the frying pan; it causes the temperature to drop. Any leftovers can be kept in an airtight container in your fridge for up to 3 days. These bites freeze well.
