- In a large mixing bowl, combine the drained canned chicken, hot sauce, ranch mix, and cayenne pepper, stirring until the chicken is fully coated.
- Fold in both cheeses and add the sliced green onions. Mix until everything is beautifully combined.
- Form the chicken mixture into 1-inch balls and place them on a parchment-lined baking sheet. Refrigerate for 2-3 hours to help them hold their shape.
- Set up your breading station with flour, beaten eggs, and breadcrumbs in separate bowls.
- Heat oil to 350°F in a deep skillet.
- Roll each ball in flour, dip in egg, then coat with breadcrumbs.
- Fry the breaded balls in hot oil for 1 to 1.5 minutes, or until golden brown.
- Remove the fried balls and place them on paper towels to drain excess oil. Serve warm.
Notes
Avoid overcrowding the frying pan; it causes the temperature to drop. Any leftovers can be kept in an airtight container in your fridge for up to 3 days. These bites freeze well.
