Preparation
- Preheat Your Oven: Set your oven to 350 degrees F (175 degrees C).
- Prepare the Baking Dish: Line an 8x8 inch baking dish with foil, leaving a bit of overhang. Grease the foil lightly with non-stick spray.
- Mix Dry Ingredients: In a large mixing bowl, whisk together flour, rolled oats, brown sugar, baking soda, salt, and ground cinnamon until well combined.
- Incorporate the Butter: Cut the cold butter into small cubes and add them to the dry mixture. Use a pastry cutter or your fingers to work the butter into the oat mixture until it resembles coarse breadcrumbs.
- Press the Base: Take about 2 cups of the oat mixture and press it into the bottom of the prepared baking dish.
- Spread the Jam: Gently spread the raspberry jam over the oat base.
- Top It Off: Sprinkle the remaining oat mixture over the jam layer, pressing it down lightly.
- Bake to Perfection: Bake in the preheated oven for 35 to 40 minutes, or until the top is light golden brown.
- Cool & Cut: Allow the bars to cool completely in the pan, then lift out using the foil overhang, slice into squares, and serve.
Notes
Store your oatmeal bars in an airtight container at room temperature for up to a week. These bars can also be frozen for up to three months. Consider adding a pinch of nutmeg for extra flavor and serving with a dollop of whipped cream or ice cream.
