Ingredients

For the batter
  • 4 large eggs, room temperature Go for organic farm-fresh eggs for richer flavor.
  • 1.25 cups eggnog, room temperature Choose a high-quality brand or make your own!
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.125 teaspoon kosher salt
For the French toast
  • 10-12 slices brioche bread (or your favorite bread) Brioche is recommended for its buttery flavor.
  • Maple syrup, for topping
  • Eggnog whipped cream, for topping See notes below for preparation.

Method

Preparation
  1. Preheat your griddle to 350F to 375F. If needed, spray with nonstick cooking spray.
  2. In a large bowl, whisk together the eggs, eggnog, vanilla extract, cinnamon, nutmeg, and kosher salt until smooth.
Cooking
  1. Take a slice of brioche and dip it into the eggnog mixture, ensuring both sides are coated but not soaked.
  2. Place the coated slice on the preheated griddle. Cook each slice for about 2-3 minutes per side or until golden brown.
  3. Transfer the slices to a plate and serve immediately, topping with maple syrup and eggnog whipped cream.

Notes

Store leftovers in the fridge for up to 3 days. For a make-ahead option, prepare the eggnog mixture the night before. For freezing, place cooked slices in a single layer on a baking sheet, then transfer to a freezer-safe bag.
