  • 1 cup shredded sweetened coconut Unsweetened coconut can be used if you prefer less sweetness.
  • 1 cup canned mandarin oranges, drained Fresh oranges can also be a bright alternative; just slice them thinly.
  • 1 cup miniature marshmallows These add a delightful softness that should not be skipped!
  • 1 cup sour cream Full-fat gives the best creamy texture; Greek yogurt can be a healthier substitute.

  1. In a medium mixing bowl, combine the pineapple, shredded coconut, mandarin oranges, and miniature marshmallows.
  2. Fold in the sour cream gently until all ingredients are evenly coated.
  3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving.
  4. Serve chilled for the best taste experience.

Notes

Make sure your butter and sour cream are at room temperature to ensure the ingredients mix evenly. It can be made a day in advance for even better flavor. Store leftovers in an airtight container in the fridge for up to 3-4 days.
