Ingredients
  

For the yogurt mixture
  • 1 1/4 cups yogurt (preferably Greek yogurt) Dairy-free yogurt can be used if desired.
  • 3 tablespoons honey Local honey adds extra flavor; can substitute with maple syrup for a vegan option.
  • 1/2 teaspoon vanilla extract Pure vanilla extract is recommended for best flavor.
For the mix-ins
  • 1 cup blueberries Ensure they are thoroughly dried, preferably organic.
  • 1/2 cup almonds Chopped into 1/4 inch pieces; slivered almonds work well.

Method
 

Preparation
  1. Pat the blueberries dry with paper towels to remove excess moisture.
  2. Chop the almonds into 1/4 inch pieces.
  3. Line a baking sheet with parchment paper.
Mixing
  1. In a medium bowl, whisk together the yogurt, honey, and vanilla extract until smooth.
Combining
  1. Gently fold in the blueberries and chopped almonds into the yogurt mixture.
Freezing
  1. Using a small ice cream scoop, drop portions of the mixture onto the lined baking sheet.
  2. Flatten the tops slightly with a wet spoon.
  3. Place the baking sheet in the freezer for at least 2 hours until the bites are firm.
Storage
  1. Transfer the frozen yogurt bites to an airtight container for longer storage.

Notes

These bites can last in the freezer for up to a month. Feel free to customize with other fruits or nuts.
