Preparation
- In a bowl, combine the plain yogurt with the peanut butter, stirring until completely smooth and well combined. This should take about 1-2 minutes of mixing.
- Finely dice the strawberries and leave the blueberries whole. Pat the berries dry to prevent extra moisture in your bites.
- Distribute the berries evenly into an ice cube tray or a silicone bite-sized mold.
- Pour the yogurt mixture over the berries, filling each section almost to the top. Use a small spoon to level the tops, then tap the tray gently to release any air bubbles.
- Place the tray in the freezer for at least 5 hours or overnight.
- To remove, run the tray under warm water for 10-15 seconds to loosen the bites. Gently pop them out.
- Store in an airtight container in the freezer for up to 3 months.
Notes
Keep an eye on the consistency of your yogurt mixture—too runny and it won’t hold properly once frozen! Avoid overcrowding the berries to ensure even freezing. Consider storing them in a labeled airtight container to prevent freezer burn.
