Pork Chops
  • 4 pieces pork chops (about 1 inch thick) Bone-in or boneless; ensure they're well-marbled.
  • 1 tbsp olive oil For searing—light and healthy.
  • black pepper Freshly cracked, to taste.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine soy sauce, honey, minced garlic, grated ginger, sesame oil, gochujang, rice vinegar, and red pepper flakes. Stir until smooth.
  3. Pat the pork chops dry with paper towels. Place pork chops in the marinade, turning to coat all sides, and let them marinate for 20 minutes at room temperature.
Cooking
  1. Heat a large oven-safe skillet over medium-high heat and add olive oil.
  2. Once shimmering, remove pork chops from marinade and place in the hot pan. Sear for 2 to 3 minutes until golden-brown.
  3. Flip the pork chops, pour the reserved marinade around them, and cook for another 2 to 3 minutes.
  4. Transfer the skillet to the preheated oven and bake for 5 to 10 minutes, or until internal temperature reaches 145°F (63°C).
  5. Let the pork chops rest for a few minutes, then season with black pepper and serve with the glaze.

Notes

For deeper flavor, marinate pork chops in advance. Leftovers can be used in salads or sandwiches. Adjust ingredients to preferences, e.g., use tamari for gluten-free options.
