Preparation
- Chop the onion and mince the garlic. Measure all seasonings into a bowl for easy access.
- Boil salted water in a large pot. Cook the penne according to package instructions, usually 8-10 minutes until al dente. Reserve a cup of pasta water before draining.
Cooking
- In a skillet, heat avocado oil over medium-high heat. Cook the chopped onion for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.
- Add the ground turkey, breaking it up while cooking, and let it brown for about 5-7 minutes until fully cooked.
- Stir in oregano, black pepper, salt, and red pepper flakes, adjusting to taste.
- Pour in the tomato sauce and let it simmer for 3-4 minutes. Add the fresh spinach and stir until wilted, about 1-2 minutes.
- Drain the penne and toss it with the sauce in the skillet. If too thick, add reserved pasta water, a tablespoon at a time.
- Serve topped with vegan parmesan and enjoy.
Notes
Make sure not to overcook the spinach. Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 3 months.
