Ingredients
  

For the Sauce
  • 24 oz tomato sauce Look for quality brands without added sugars or preservatives.
  • 1 lb ground turkey Opt for lean ground turkey for a healthier option.
  • 1/2 cup fresh spinach Fresh is best, thaw and drain if using frozen.
  • 4 cloves garlic, minced Fresh garlic elevates the dish.
  • 3 tbsp vegan parmesan Optional for garnish.
  • 1 cup penne pasta Gluten-free penne can be used.
  • 1 tsp oregano A must-have herb for flavor.
  • 1/4 tsp black pepper Freshly ground is preferred.
  • 1/2 tsp salt Adjust to taste.
  • 1/4 tsp red pepper flakes Optional for additional heat.
  • 1.5 tbsp avocado oil For sautéing the onion.

Method
 

Preparation
  1. Chop the onion and mince the garlic. Measure all seasonings into a bowl for easy access.
  2. Boil salted water in a large pot. Cook the penne according to package instructions, usually 8-10 minutes until al dente. Reserve a cup of pasta water before draining.
Cooking
  1. In a skillet, heat avocado oil over medium-high heat. Cook the chopped onion for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.
  2. Add the ground turkey, breaking it up while cooking, and let it brown for about 5-7 minutes until fully cooked.
  3. Stir in oregano, black pepper, salt, and red pepper flakes, adjusting to taste.
  4. Pour in the tomato sauce and let it simmer for 3-4 minutes. Add the fresh spinach and stir until wilted, about 1-2 minutes.
  5. Drain the penne and toss it with the sauce in the skillet. If too thick, add reserved pasta water, a tablespoon at a time.
  6. Serve topped with vegan parmesan and enjoy.

Notes

Make sure not to overcook the spinach. Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 3 months.
