  • 1 lb ground turkey Look for lean turkey (93% or 99% lean), free from added hormones.
  • 8 oz tomato paste Use a high-quality brand, such as Cento or Muir Glen.
  • 1/3 cup water Helps to loosen up the tomato paste.
  • 1 tbsp poultry seasoning Fresh spices make a difference.
  • 1/2 tsp garlic powder Fresh garlic can be used for more flavor; about 2 cloves minced.
  • 4 pieces bell peppers, halved lengthwise and hollowed out Choose vibrant bell peppers—red, yellow, or orange are sweeter!
  • 1.25 cups mozzarella, freshly shredded Opt for fresh mozzarella for a creamier melt.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Wash and slice the bell peppers in half lengthwise, removing the seeds and membranes.
Cooking
  1. Heat a skillet over medium-high heat and add the ground turkey. Cook until no longer pink (about 5-7 minutes).
  2. Stir in the tomato paste, water, poultry seasoning, and garlic powder. Let it simmer for 2-3 minutes to combine flavors.
  3. Spoon the turkey mixture into each pepper half, filling them generously.
  4. Sprinkle the freshly shredded mozzarella evenly over the stuffed peppers.
  5. Bake in the preheated oven for 20-25 minutes until the peppers are tender and cheese is melted and bubbly.
  6. For a golden top, broil for an additional 1-2 minutes, watching closely.
  7. Let cool for a few minutes before serving.

Notes

Consider adding jalapeños or chili flakes for a hint of spice. Store leftovers in an airtight container in the fridge for up to 4 days.
