Dry Ingredients
  • 2 cups almond flour Look for finely ground for a smooth texture.
  • 1 teaspoon baking soda Your leavening agent.
  • 1/2 teaspoon salt Balances the sweetness.
Optional Additions
  • 1/2 cup chopped nuts or chocolate chips Think walnuts for texture or dark chocolate for decadence.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add the eggs, honey (or maple syrup), and vanilla extract to the mashed bananas and mix well until combined.
  4. In a separate bowl, combine the almond flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. If desired, fold in chopped nuts or chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container for up to 2 days, or in the fridge for up to a week. Can be frozen for up to 3 months. Consider adding spices like cinnamon or nutmeg for extra flavor.
