  • 1/4 cup chia seeds Organic chia seeds recommended.
  • 2 cups almond milk (or milk of choice) Unsweetened almond milk works best; can swap with coconut or dairy milk.
  • 1 teaspoon vanilla extract Use pure extract for the best taste.
  • 1 tablespoon honey or maple syrup (optional) Adjust sweetness based on the ripeness of bananas.
  • 1 pinch salt Enhances flavors and sweetness of bananas.

Preparation
  1. In a mixing bowl, mash the ripe bananas until smooth and creamy.
  2. Add almond milk and vanilla extract to the bowl, and mix thoroughly.
  3. Sprinkle in chia seeds, honey or maple syrup if using, and a pinch of salt. Mix well.
  4. Stir until everything is well-combined and looking creamy.
  5. Allow the mixture to sit for about 5 minutes to let chia seeds absorb some liquid. Stir again to prevent clumping.
  6. Cover the bowl and refrigerate for at least 4 hours or overnight.
  7. Serve cold and top with fresh fruits, nuts, or extra honey if desired.

Notes

Store covered in the fridge for up to 5 days. Regular stirring helps prevent clumping.
