Preparation
- Start by mincing the garlic and preparing the kale—wash it well, remove the tough stems, and tear it into bite-sized pieces.
Cooking the Turkey
- In a large skillet, heat 1.5 tsp of olive oil over medium-high heat.
- Add the ground turkey and season with salt, black pepper, red pepper flakes, and smoked paprika.
- Cook for about 5-7 minutes until the turkey is browned and cooked through, crumbling it into smaller bits.
- Allow the turkey to brown for depth of flavor.
Cooking the Gnocchi
- In the same skillet, add the sweet potato gnocchi and cook for 3-4 minutes on each side until golden and slightly crispy.
- Look for a beautiful golden color and slight crust for texture.
Sautéing Garlic and Kale
- In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
- Then add the torn kale, cooking until wilted—about 2-3 minutes.
Combine and Serve
- Return the ground turkey and cooked gnocchi to the skillet.
- Toss everything together to combine and heat through.
- Taste, adjust seasoning if necessary, and serve warm with a squeeze of lemon juice.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can freeze the unprepared gnocchi for up to 2 months.
