  • 5.3 oz Sweet Potato Gnocchi Store-bought works, or you can make your own.
  • 1.5 cups Kale Remove stems and tear leaves into 1-inch pieces.
  • 3 cloves Garlic Minced; use fresh for the best aroma and flavor.
  • 1.5 tsp Olive Oil Extra virgin olive oil for drizzling or sautéing.

Preparation
  1. Start by mincing the garlic and preparing the kale—wash it well, remove the tough stems, and tear it into bite-sized pieces.
Cooking the Turkey
  1. In a large skillet, heat 1.5 tsp of olive oil over medium-high heat.
  2. Add the ground turkey and season with salt, black pepper, red pepper flakes, and smoked paprika.
  3. Cook for about 5-7 minutes until the turkey is browned and cooked through, crumbling it into smaller bits.
  4. Allow the turkey to brown for depth of flavor.
Cooking the Gnocchi
  1. In the same skillet, add the sweet potato gnocchi and cook for 3-4 minutes on each side until golden and slightly crispy.
  2. Look for a beautiful golden color and slight crust for texture.
Sautéing Garlic and Kale
  1. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
  2. Then add the torn kale, cooking until wilted—about 2-3 minutes.
Combine and Serve
  1. Return the ground turkey and cooked gnocchi to the skillet.
  2. Toss everything together to combine and heat through.
  3. Taste, adjust seasoning if necessary, and serve warm with a squeeze of lemon juice.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can freeze the unprepared gnocchi for up to 2 months.
