  • 2 lb ground turkey Lean turkey breast works best for a healthier option.
  • 1.5 tbsp olive oil Extra virgin preferred for robust flavor.
  • 1 large onion, finely diced Diced into 1/4-inch pieces.
  • 5 cloves garlic, minced Fresh makes a world of difference!
  • 3.5 tbsp Italian seasoning Dried works well, but fresh is better!
  • 2.5 tbsp dried basil
  • 2.5 tsp salt Adjust to taste.
  • 1 tsp red pepper flakes To spice things up!
  • Freshly ground black pepper To taste.
  • 28 oz crushed tomatoes Use fire-roasted for deeper flavor.
  • 10 oz Rotel Diced tomatoes and green chilies.
  • 2 cups water
  • 4 cups chicken broth Homemade or low-sodium.
  • 8 oz lasagna noodles Broken into 1-inch pieces.
  • 4 oz ricotta cheese Plus more for garnish.
  • Fresh basil, chopped For garnish.
  • Crushed red pepper For garnish.
  • Freshly grated parmesan cheese For garnish.

Method
 

Cooking
  1. Heat the olive oil in a large pot over medium-high heat until shimmering.
  2. Add the minced garlic and cook for about 30 seconds until fragrant.
  3. Add the diced onion and sauté for 3-4 minutes until translucent and tender.
  4. Add the ground turkey, breaking it into small pieces. Cook for 5-7 minutes until it turns golden brown.
  5. Stir in Italian seasoning, dried basil, salt, red pepper flakes, and black pepper; cook for another 1-2 minutes.
  6. Add crushed tomatoes, Rotel, water, and chicken broth; bring to a boil for about 5 minutes.
  7. Add broken lasagna noodles to the pot and boil for 8-10 minutes until al dente.
  8. Reduce heat and stir in the ricotta cheese; let simmer for another 2-3 minutes.
  9. Ladle into warm bowls and top generously with additional ricotta, fresh basil, crushed red pepper, and parmesan.

Notes

For a creamier soup, try adding a splash of heavy cream or milk before serving. Ensure all ingredients are at room temperature for best flavor infusion.
