- Heat the olive oil in a large pot over medium-high heat until shimmering.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Add the diced onion and sauté for 3-4 minutes until translucent and tender.
- Add the ground turkey, breaking it into small pieces. Cook for 5-7 minutes until it turns golden brown.
- Stir in Italian seasoning, dried basil, salt, red pepper flakes, and black pepper; cook for another 1-2 minutes.
- Add crushed tomatoes, Rotel, water, and chicken broth; bring to a boil for about 5 minutes.
- Add broken lasagna noodles to the pot and boil for 8-10 minutes until al dente.
- Reduce heat and stir in the ricotta cheese; let simmer for another 2-3 minutes.
- Ladle into warm bowls and top generously with additional ricotta, fresh basil, crushed red pepper, and parmesan.
Notes
