Ingredients

  • 9 cups cabbage, thinly shredded Fresh green cabbage recommended, red cabbage can be mixed for color.
  • 14 oz broccoli slaw mix Additional shredded carrots or leafy greens can be used.
  • 1/2 cup carrots, finely shredded Fresh is best, but pre-packaged works well.
  • 1/2 cup scallions, thinly sliced Adds a bit of punch.
  • 1 count apple, cored and cut into 1/4 inch matchsticks Granny Smith adds a nice tart flavor.
For the dressing
  • 1.25 cups yogurt Full-fat Greek yogurt recommended for creaminess.
  • 0.75 cup mayonnaise Light mayonnaise can be used.
  • 2 tbsp vinegar Apple cider vinegar offers contrasting zing.
  • 1 tbsp lemon juice Freshly squeezed for brightness.
  • 1 tsp garlic, minced For that little kick.
  • to taste Salt and pepper Add to taste.
  • a pinch white pepper Optional, adds subtle depth.

Method
 

Preparation
  1. In a large mixing bowl, combine the shredded cabbage, broccoli slaw mix, finely shredded carrots, and thinly sliced scallions. Toss everything together gently until the vegetables are evenly distributed.
Making the Dressing
  1. In a separate bowl, whisk together the yogurt, mayonnaise, vinegar, freshly squeezed lemon juice, minced garlic, salt, and white pepper until smooth.
Combine and Serve
  1. Core the apple and cut it into thin 1/4 inch matchsticks, and add the fresh apple along with the dressing to the vegetable mixture. Toss everything together until all the veggies are thoroughly coated in the dressing.

Notes
