  • 1 slices jalapeno For a bit of fresh heat
  • 6 oz cream cheese, room temperature This helps blend the filling smoothly
  • 1/4 cup sour cream Adds creaminess
  • 1 diced jalapeno, seeds removed For extra flavor
  • 1/2 cup sharp cheddar cheese Adds a wonderful richness
  • 1/2 tsp seasoning Your choice of BBQ or Cajun blends works wonderfully
  • 1/4 tsp smoked paprika For that smoky touch
  • 1/4 cup BBQ sauce Choose your favorite
  • 3 tbsp honey For a hint of sweetness
  • 1.5 tsp brown sugar Enhances the glaze

Method
 

Preparation
  1. Preheat your oven to 375 degrees F. Line a large baking sheet with foil for easy cleanup.
  2. Slice your sausage into 1/2-inch rounds and cut your bacon into halves or thirds, depending on how much of the sausage you want covered.
  3. In a small bowl, whisk together the BBQ sauce, honey, and brown sugar until smooth. In a separate bowl, combine the cream cheese, sour cream, diced jalapeno, cheddar cheese, seasoning, and smoked paprika. Mix until well incorporated.
  4. Transfer the creamy mixture into a piping bag or a zip-top bag with a corner snipped off for easier application.
  5. Wrap each sausage round entirely with a piece of bacon, securing it with a toothpick. Place the wrapped bites on the prepared baking sheet.
  6. Cover each wrapped sausage with the cream cheese mixture using the piping bag, then top with a slice of fresh jalapeno. Brush each bite with the BBQ glaze.
Baking
  1. Place the baking sheet in the oven and bake for 40-45 minutes, or until the bacon is crispy and golden brown.
  2. Let them cool for 2-3 minutes before serving, allowing the cheese to firm up slightly.

Notes

These can be prepared a day in advance. Store leftovers in an airtight container in the fridge for up to three days or freeze unbaked for up to three months.
