Method
Preparation
- Preheat your oven to 375 degrees F (190 degrees C).
- In a skillet over medium-high heat, cook the bacon until crispy (about 8-10 minutes). Reserve 1 tbsp of the bacon grease in the skillet, then crumble the bacon once cooled.
- Pat the chicken thighs dry with a paper towel and season generously with salt and pepper.
- In the reserved bacon grease, sear the chicken for 3-4 minutes on each side until golden brown. Transfer the chicken to a baking dish.
Filling Preparation
- In a bowl, combine the softened cream cheese, cream, minced garlic, and onion powder. Mix until smooth and creamy.
- Spread this mixture generously over the seared chicken.
- Layer the sliced jalapenos, shredded cheddar cheese, and crumbled bacon over the top.
Baking
- Pop the dish in the oven and bake for 20 minutes until the cheese is bubbly and golden, and the chicken reaches an internal temperature of 165 degrees F.
- Let it rest for 2-3 minutes before serving to allow the juices to redistribute in the chicken.
Notes
Avoid overcooking by keeping a meat thermometer handy. Searing is essential for achieving a good crust.
