  • 1 tbsp bacon grease Reserve after cooking bacon.
  • 5 oz cream cheese Softened to room temperature for easy mixing.
  • 5 tbsp cream Heavy whipping cream works best.
  • 2 cloves garlic Minced, fresh is always better.
  • 1/4 tsp onion powder Adds an extra punch of flavor.
  • 2 jalapeno peppers Deseeded and sliced, adjust according to heat preference.
  • 1.75 cups cheddar cheese Sharp cheddar is recommended.

Preparation
  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a skillet over medium-high heat, cook the bacon until crispy (about 8-10 minutes). Reserve 1 tbsp of the bacon grease in the skillet, then crumble the bacon once cooled.
  3. Pat the chicken thighs dry with a paper towel and season generously with salt and pepper.
  4. In the reserved bacon grease, sear the chicken for 3-4 minutes on each side until golden brown. Transfer the chicken to a baking dish.
Filling Preparation
  1. In a bowl, combine the softened cream cheese, cream, minced garlic, and onion powder. Mix until smooth and creamy.
  2. Spread this mixture generously over the seared chicken.
  3. Layer the sliced jalapenos, shredded cheddar cheese, and crumbled bacon over the top.
Baking
  1. Pop the dish in the oven and bake for 20 minutes until the cheese is bubbly and golden, and the chicken reaches an internal temperature of 165 degrees F.
  2. Let it rest for 2-3 minutes before serving to allow the juices to redistribute in the chicken.

Notes

Avoid overcooking by keeping a meat thermometer handy. Searing is essential for achieving a good crust.
