  • 3 tablespoons Japanese Kewpie mayonnaise Kewpie is the gold standard for its umami flavor.
  • 3 tablespoons neutral-flavored oil (e.g., avocado oil)
  • 1.5 tablespoons Japanese soy sauce Opt for naturally brewed for the best flavor.
  • 1 tablespoon rice vinegar
  • 2-3 teaspoons honey or brown sugar For a vegan option, substitute with maple syrup.
  • 0.5 teaspoon toasted sesame oil
  • freshly ground to taste black pepper

Method
 

Preparation
  1. Toast the sesame seeds in a dry pan over medium-high heat, stirring constantly, until golden brown. Reduce heat and continue to toast until dark brown, about 5-7 minutes. Cool on a plate.
  2. Grind the cooled sesame seeds in a mortar and pestle until they turn into a fine meal.
Mixing
  1. In the mortar, add Kewpie mayonnaise, neutral oil, soy sauce, rice vinegar, honey or brown sugar, toasted sesame oil, and black pepper. Whisk until creamy.
  2. Taste and adjust the seasoning to your preference, adding more honey for sweetness or soy sauce for saltiness.
Storage
  1. Pour the dressing into an airtight container and store in the fridge for up to a few weeks.

Notes

Make sure mayonnaise and oils are at room temperature for easier mixing. Store in glass containers for better flavor preservation.
