Ingredients
  

Pasta and Cheese
  • 1.2 lb spaghetti Use De Cecco or Barilla for the best texture.
  • 0.75 cup parmesan Freshly grated is key for melting.
Shrimp and Seasoning
  • 1.1 lb shrimp Deveined and peeled, fresh or frozen.
  • 8 cloves garlic Sliced thinly.
  • 3 tsp red pepper flakes Adjust based on spice preference.
  • 2 tsp lemon juice Freshly squeezed.
  • 2 tbsp dry white wine Sauvignon Blanc or Pinot Grigio recommended.
  • Salt and pepper to taste Use kosher salt.
Herbs and Oil
  • 0.5 cup fresh parsley Roughly chopped, fresh preferred.
  • 4 tbsp olive oil High-quality extra virgin olive oil.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Thinly slice the garlic, roughly chop the parsley, and grate the parmesan. Peel and devein the shrimp.
Cooking Pasta
  1. Cook the spaghetti according to package directions until al dente. Save at least 1 cup of pasta water before draining.
Flavor Development
  1. In a skillet, heat the olive oil over medium heat. Add sliced garlic and sauté for 2-3 minutes until golden.
Spice It Up
  1. Add red pepper flakes and stir for another 30 seconds.
Cook Shrimp
  1. Increase heat to medium-high and add shrimp. Sauté for 2-3 minutes until pink.
Incorporate Wine
  1. Pour in white wine and let reduce for 30 seconds.
Finish Sauce
  1. Squeeze lemon juice, add salt, pepper, and reserved pasta water.
Combine
  1. Toss spaghetti into the skillet, adding more pasta water for desired texture.
Garnish and Serve
  1. Stir in parmesan and half of the parsley. Plate immediately, garnishing with remaining parsley and parmesan.

Notes

Use fresh ingredients for the best flavor. Store leftovers in an airtight container for up to 3 days.
