Ingredients
  

For the Strawberry Cold Foam
  • 1/3 cup cream (chilled) Can substitute with coconut cream for a dairy-free option.
  • 4 tbsp hot water Approximately 175 degrees F for whisking the matcha.
  • 2.5 tsp sugar Adjust according to sweetness preference.
  • 4 strawberries finely diced (into 1/8-inch pieces) For topping the latte.
  • 1 tsp vanilla essence Adds depth of flavor.
  • 2.5 tsp maple syrup Natural sweetener that complements strawberries.
  • pinch sea salt Enhances flavor.
For the Matcha Latte
  • 1.25 cups milk (Oatly Full Fat recommended) Can use any milk of choice.
  • 1.25 tsp matcha (ceremonial grade recommended) Higher quality matcha improves taste.
  • 4 strawberries hulled and sliced (into 1/4-inch pieces) Key for muddling.
  • ice For serving Use as required.

Method
 

Whipping the Cold Foam
  1. In a medium bowl, use an electric mixer to whip the chilled cream until soft peaks form—about 2-3 minutes.
  2. Add finely diced strawberries, vanilla essence, maple syrup, and a pinch of sea salt; continue whipping until thick.
  3. Set aside in the fridge to keep cool.
Preparing the Matcha
  1. In a small bowl, whisk the matcha powder with the hot water until smooth and frothy (about a minute).
  2. Make sure there are no clumps for a silky texture.
Muddling the Strawberries
  1. In a tall glass, muddle the sliced strawberries with sugar until juicy—about 30 seconds.
Assembling the Latte
  1. Fill the glass with ice and carefully pour milk over the muddled strawberries, stirring gently to combine.
  2. Next, pour the whisked matcha over the milk, allowing it to float on top for a stunning layered look.
  3. Finally, scoop the strawberry cold foam onto the top of your latte and garnish with more diced strawberries.

Notes

For a refreshing experience, chill your serving glasses in the freezer for about 10-15 minutes before serving. If you have extra foam, it can last in the fridge for up to 2 days but re-whip before serving.
