  • 8 oz cream cheese Allow it to come to room temperature for easy mixing.
  • 2 cups chicken, shredded Perfect for using leftovers; rotisserie chicken works great!
  • 3/4 cup buffalo sauce Go for your favorite brand; many have varying levels of heat.
  • 3/4 cup ranch dressing Homemade or store-bought can work.
  • 1/3 cup cheddar, shredded Freshly shredded melts better than pre-shredded.
  • 1/4 cup blue cheese, crumbled For that tangy punch.
  • 1 1/2 tbsp chives, snipped For a pop of flavor and color.
  • 1/2 tsp garlic powder For added depth.
  • 1/3 cup cheddar for topping Because more cheese is always a good idea!
  • 1/3 cup blue cheese for topping To take it up a notch.
  • 1 tbsp chives for garnish For that final touch of freshness.

Method
 

Preparation
  1. Soften the cream cheese by microwaving it at 50 percent power for 30 seconds until it begins to soften.
  2. Add the shredded chicken, buffalo sauce, ranch dressing, garlic powder, cheddar, blue cheese, and chives to the softened cream cheese. Mix thoroughly.
Cooking
  1. Microwave the mixture at 80 percent power for 1 minute, stir, then microwave for another minute.
  2. Top the dip with the remaining cheddar and blue cheese, then microwave at high power for 2-3 minutes until melted and bubbly.
  3. Garnish with minced chives and serve hot with tortilla chips, crackers, or fresh veggies.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. This dip can be frozen for up to 2 months, though the texture may slightly change upon reheating.
