Ingredients

Main ingredients
  • 8 oz spaghetti Good quality pasta like Barilla or De Cecco is recommended.
  • 1/2 cup parmesan, freshly grated Use Parmigiano-Reggiano if available.
  • 1/3 cup sun-dried tomatoes Packed in oil for more flavor.
  • 1/4 cup parsley, chopped Fresh parsley adds brightness.
  • 7 cloves garlic, thinly sliced Adjust quantity based on garlic preference.
  • 1.5 tbsp olive oil Extra virgin olive oil for rich taste.
  • 1/4 tsp pepper Freshly cracked black pepper enhances flavor.
  • 1/8 tsp salt Season according to taste.
  • 6-7 cups water Enough to cover spaghetti and create sauce.

Method

Preparation
  1. Thinly slice the garlic cloves, grate the parmesan, and chop the parsley.
Cooking
  1. In a large pot or skillet, heat the olive oil over medium heat. Add the sliced garlic, cooking for 2-3 minutes until golden and fragrant.
  2. In the same pot, add enough water to cover the spaghetti. Add salt and bring to a rolling boil.
  3. Once boiling, add the spaghetti. Cook for 9-10 minutes, stirring occasionally until al dente.
  4. Reduce heat to low and stir in the parmesan, sun-dried tomatoes, and pepper until the cheese melts and forms a creamy sauce.
  5. Remove from heat and mix in chopped parsley. Serve immediately.

Notes

Don't overcook pasta for a perfect al dente texture. Reserve pasta water for sauce consistency adjustments.
