  • 1-2 tablespoons Chopped rosemary or thyme (optional) Optional for extra flavor.

Preparation
  1. Preheat your oven to 400°F (200°C). This ensures your filet mignon cooks evenly.
  2. Rub the filet mignon steaks generously with olive oil, then season both sides liberally with salt, black pepper, and garlic powder.
  3. For an enhanced flavor profile, sprinkle chopped rosemary or thyme on the steaks.
Cooking
  1. Heat a heavy-bottomed cast iron skillet over medium-high heat. Once hot, sear the steaks for 2-3 minutes on each side until browned.
  2. If desired, add a pat of butter on top of each steak for additional richness.
  3. Transfer the skillet to the preheated oven. Bake for 6-10 minutes, depending on your preferred level of doneness (6 for rare, 10 for medium).
Serving
  1. Remove the skillet from the oven and let the steaks rest for a few minutes to enhance flavor.
  2. Slice the steak against the grain and fan out the pieces on a warm plate. Drizzle the savory juices from the skillet over the top and garnish with fresh herbs.
