Preparation
- Preheat your oven to 400°F (200°C). This ensures your filet mignon cooks evenly.
- Rub the filet mignon steaks generously with olive oil, then season both sides liberally with salt, black pepper, and garlic powder.
- For an enhanced flavor profile, sprinkle chopped rosemary or thyme on the steaks.
Cooking
- Heat a heavy-bottomed cast iron skillet over medium-high heat. Once hot, sear the steaks for 2-3 minutes on each side until browned.
- If desired, add a pat of butter on top of each steak for additional richness.
- Transfer the skillet to the preheated oven. Bake for 6-10 minutes, depending on your preferred level of doneness (6 for rare, 10 for medium).
Serving
- Remove the skillet from the oven and let the steaks rest for a few minutes to enhance flavor.
- Slice the steak against the grain and fan out the pieces on a warm plate. Drizzle the savory juices from the skillet over the top and garnish with fresh herbs.
Notes
Pair with a side of steamed vegetables or a full-bodied red wine for a complete dining experience. Can be made vegan with Portobello mushrooms and plant-based butter.
