Ingredients
  

For the Eggs
  • 2-3 large eggs (preferably free-range) For extra flavor
  • 1 Tbsp unsalted butter Bring to room temperature for easier melting
  • 2-3 slices Vietnamese ham (cha lua), sliced thinly
  • 120 g ground pork, beef, or chicken Choose lean cuts for a healthier twist
For the Flavor
  • 2-3 pieces Chinese sausages, sliced Try “Lap Cheong” for the best results
  • ½ Tbsp oyster sauce Adds depth of flavor
  • 1 tsp Maggi Seasoning or Golden Mountain Sauce For that umami hit
  • 1 clove garlic, finely grated Optional for extra earthiness
  • ½ pieces green onion, chopped Optional for freshness
  • to taste white or black pepper, Sriracha hot sauce, ketchup Optional condiments

Method
 

Preparation
  1. In a bowl, combine your choice of ground meat, oyster sauce, Maggi Seasoning, and garlic (if using). Mix well!
  2. Transfer to a sauté pan with a splash of water, bringing to a boil. Cook, breaking the meat into lumps until fully cooked (about 5-7 minutes). Stir in chopped green onions.
Cooking Meats
  1. Slice the Chinese sausages and Vietnamese ham thinly. In a separate lightly greased pan over medium heat, sear them until they are nicely browned (around 3-5 minutes). Remove and set aside.
Cooking Eggs
  1. Return to the pan, heat over medium-low. If using stainless steel, wait until it’s hot to prevent sticking. Add butter; once melted, crack in the eggs and lay the sautéed meats on top.
Steaming Eggs
  1. Let them steam for about 3-5 minutes, or until the egg whites are set, and the yolks are cooked to your liking.
Serving
  1. Once finished, remove from heat. Garnish with extra green onions and white pepper if desired. Serve with some crusty bread and your choice of condiments!
