Preparation
- Line a standard 12-cup muffin tin with paper liners (optional).
- Measure and place 1 tablespoon of granola into each muffin cup for a crunchy base.
- In a medium bowl, combine the yogurt, peanut butter, and vanilla protein powder. Whisk until smooth and creamy.
- Spoon the yogurt mix into the muffin cups, filling them about three-quarters full and tapping the tin on the counter to settle the mixture.
Freezing and Chocolate Drizzle
- Place the filled tin in the freezer for about 30 minutes to firm up.
- Melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
- Drizzle melted chocolate over each cup and sprinkle remaining granola on top.
- Return to the freezer for at least 45 minutes, or until chocolate has hardened.
Serving
- Store in an airtight container in the freezer for up to 2 weeks.
- Let a bite sit out for 20-30 minutes to soften before consuming.
