Ingredients
  

Base Ingredients
  • 3/4 cup granola
  • 1 1/2 cup yogurt Greek yogurt recommended for creaminess and protein
  • 1/2 cup peanut butter Use natural peanut butter with no added sugars
  • 2/3 cup vanilla protein powder Can substitute with chocolate flavor if desired
  • 1 pinch salt Enhances flavors
  • 1/3 cup chocolate chips Melted and cooled to room temperature
  • 1 tsp coconut oil For drizzling chocolate

Method
 

Preparation
  1. Line a standard 12-cup muffin tin with paper liners (optional).
  2. Measure and place 1 tablespoon of granola into each muffin cup for a crunchy base.
  3. In a medium bowl, combine the yogurt, peanut butter, and vanilla protein powder. Whisk until smooth and creamy.
  4. Spoon the yogurt mix into the muffin cups, filling them about three-quarters full and tapping the tin on the counter to settle the mixture.
Freezing and Chocolate Drizzle
  1. Place the filled tin in the freezer for about 30 minutes to firm up.
  2. Melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
  3. Drizzle melted chocolate over each cup and sprinkle remaining granola on top.
  4. Return to the freezer for at least 45 minutes, or until chocolate has hardened.
Serving
  1. Store in an airtight container in the freezer for up to 2 weeks.
  2. Let a bite sit out for 20-30 minutes to soften before consuming.

Notes

These bites can be customized with different nut butters or flavor combinations like cocoa powder or fruit. Freezing makes them perfect for meal prep.
