  • 1/2 cup Greek yogurt Use full-fat for creaminess.
  • 1.5 tablespoons lemon juice Freshly squeezed is best.
  • 1.5 teaspoons Dijon mustard Can swap for honey mustard.

  • 1/4 teaspoon black pepper Freshly ground is preferred.
  • 12 leaves lettuce (romaine or butter lettuce) For a crisp base.

Preparation
  1. Heat a dry skillet over medium heat and toast slivered almonds for 3-4 minutes until golden and fragrant.
  2. Dice the chicken and celery, thinly slice the red onions and cilantro, and drain the pineapple well.
  3. Whisk together Greek yogurt, lemon juice, Dijon mustard, salt, and black pepper in a medium bowl until smooth.
  4. In a large bowl, mix chicken, drained pineapple, celery, red onions, cilantro, and cooled toasted almonds.
  5. Pour the dressing over the salad and stir gently until everything is coated. Let sit for 5-10 minutes.
  6. Line croissants with lettuce leaves and spoon the salad onto the croissants. Serve immediately or chill until serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For extra flavor, marinate chicken in lemon juice and herbs beforehand.
