Preparation
- In a medium bowl, combine the softened cream cheese, brown sugar, salt, and ground ginger, mixing well until you achieve a smooth consistency.
- Fold in the finely diced pineapple carefully, reserving about 2 tablespoons for garnish later.
Assembly
- Wrap each sausage round with half a slice of bacon, overlapping slightly.
- Preheat your smoker or oven to 300°F (150°C).
- Sprinkle 1.5 tablespoons of the sweet rub over the wrapped sausage rounds.
- Using a piping bag or a zip-top bag with the corner snipped off, fill each sausage round generously with your creamy pineapple mixture.
- Sprinkle some additional sweet rub on top and add your reserved pineapple for extra flavor.
Cooking
- Cook the Pig Shots in your smoker or oven for 75-90 minutes or until the bacon is crispy and the filling is warm.
- Let them sit for 2-3 minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze after cooking. You may prepare the filling a day ahead and assemble just before cooking.
