Preparation
- In a mixing bowl, whisk together the chicken broth, soy sauce, balsamic vinegar, honey, garlic powder, onion powder, minced garlic, salt, and pepper.
- Pat the pork loin dry with paper towels and season all sides generously with salt and pepper.
Searing the Pork
- Heat avocado oil in a large skillet over medium-high heat. Once shimmering, sear the pork for about 3-4 minutes per side until beautifully browned.
Cooking
- Place the sliced onions in the bottom of the slow cooker.
- Place the seared or raw pork loin on top of the onions and pour the prepared sauce over the pork.
- Cover and cook on low for 8 hours or on high for 4-5 hours until the pork shreds to perfection.
Notes
Let the pork rest before slicing to allow the juices to redistribute. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
