  • 1.25 cups self-rising flour Use a high-quality brand for the best rise.
  • 1 cup cottage cheese Low-fat or full-fat options depending on dietary needs.
  • 0.25 teaspoon salt
  • 1 large egg Room temperature for better mixing.
  • 3 tablespoons brown sugar
  • 1.5 tablespoons cinnamon Ceylon cinnamon is recommended for sweetness.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Blend the cottage cheese in a blender or food processor until smooth.
  3. In a small bowl, whisk together the brown sugar and cinnamon until well combined.
  4. In another bowl, beat the egg lightly.
  5. In a large mixing bowl, combine the self-rising flour and salt. Gently fold in the blended cottage cheese until a shaggy dough forms.
  6. Knead the dough on a floured surface for about 2-3 minutes until smooth.
  7. Divide the dough into four equal pieces, roll each into a rope about 8-10 inches long, and pinch the ends to seal.
  8. Place the bagels on a parchment-lined baking sheet.
  9. Brush each bagel with the beaten egg and sprinkle with the cinnamon sugar mixture.
  10. Bake for 25-28 minutes or until golden brown and firm.
  11. Allow to cool for about 5 minutes on the sheet before transferring to a wire rack.

Notes

Store in an airtight container for up to 3 days at room temperature or freeze for up to 2 months. The dough can be prepared the night before and refrigerated.
