Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the eggs until fluffy, then add in the oil, grated carrots, and drained pineapple.
  4. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined.
  5. Pour the batter evenly between the two prepared cake pans.
  6. Place the cakes in your preheated oven and bake for 25-30 minutes.
  7. Allow the cakes to cool in their pans for about 10 minutes before transferring them to a wire rack to cool completely.
Frosting
  1. In a mixing bowl, beat together the softened cream cheese and butter until smooth.
  2. Gradually add in the powdered sugar and vanilla extract until you achieve a creamy consistency.
Assembly
