  • 2 lbs fresh strawberries Select firm and fresh strawberries for the best flavor.
  • 1 deep dish pie crust Store-bought pie crust is recommended.
  • 1 cup water
  • 1 cup sugar Substitute with monk fruit sweetener for a lower calorie option.
  • 4 tbsp cornstarch Thickening agent for the filling.
  • 4 tbsp strawberry Jello powder Adds flavor and gloss to the filling.

Method
 

Preparation
  1. Follow the instructions on the package to prepare the pie crust. Once baked, set aside to cool.
  2. Rinse your fresh strawberries under cold water and hull them. Slice the strawberries in halves or quarters, depending on their size.
  3. Generously layer the cleaned strawberries into the cooled pie crust, arranging them to look appealing.
Making the Filling
  1. In a saucepan over medium heat, combine 1 cup of water, 1 cup of sugar, and 4 tablespoons of cornstarch. Stir until well mixed.
  2. Heat the mixture until it comes to a boil and turns clear, about 5-7 minutes.
  3. Remove from heat and stir in the strawberry Jello powder until it’s completely dissolved.
  4. Pour the Jello mixture over the arranged strawberries in the pie crust, ensuring they’re all covered.
Chilling
  1. Place the pie in the refrigerator to set for at least 4 hours before serving.

Notes

Serve with a dollop of whipped cream or a scoop of vanilla ice cream. Store in the refrigerator for up to 3 days or freeze for up to 3 months.
