Preparation
- In a small saucepan, add water, butter, sugar, and salt. Heat over medium until the butter melts and the mixture starts to gently bubble.
- Add the flour all at once. Stir with a sturdy spoon until it turns into a smooth ball and pulls away from the pan. Keep stirring for about 30 to 60 seconds to cook off a little extra moisture.
- Turn off the heat and let the dough sit for 5 to 8 minutes. Add the egg and mix until it looks smooth and glossy. Stir in vanilla if using.
- Spoon the dough into a piping bag with a star tip. Pipe small 1 to 1.5 inch pieces onto a plate or parchment.
Cooking
- Lightly spray the air fryer basket with oil. Place the pieces in a single layer with space between them.
- Air fry at 375°F for 7 to 10 minutes until golden. Check at 7 minutes, especially for the first batch.
- Mix sugar and cinnamon in a bowl. Toss the churro bites in the cinnamon sugar as soon as they come out.
Serving
- Serve immediately with your favorite dip, such as warm chocolate sauce or caramel.
Notes
These churros are best enjoyed fresh within 30 minutes. If storing, allow them to cool completely and keep them in a container with the lid slightly cracked for the first hour.
